Ingredients
- 250 grams Fresh asparagus
- 200 grams Tagliatelle pasta
- 30 ml Extra virgin olive oil
- 2 cloves, minced Garlic
- 0.5 teaspoon Red pepper flakes
- 1, zest and half juiced Lemon
- 30 grams, chopped Fresh parsley
- 30 grams, grated Parmesan cheese
- to taste Sea salt
- to taste Black pepper
Instructions
- Preheat your oven to 200°C (400°F) and prepare a large pot of salted water for the pasta.
- Trim the woody ends off the asparagus spears, then toss them with 15 ml of olive oil, salt, and pepper on a baking sheet.
- Roast the asparagus in the preheated oven for 10-12 minutes until tender-crisp and slightly charred.
- While the asparagus roasts, add the tagliatelle to the boiling salted water and cook according to package directions until al dente, usually 8-10 minutes.
- Reserve 120 ml of the pasta cooking water before draining the tagliatelle thoroughly.
- Heat the remaining 15 ml of olive oil in a large skillet or sauté pan over medium heat for 1 minute.
- Add the minced garlic and red pepper flakes to the skillet and sauté for 1 minute until fragrant, being careful not to burn the garlic.
- Add the drained tagliatelle, roasted asparagus, lemon zest, and half of the chopped parsley to the skillet.
- Pour in the reserved pasta water and the juice from half a lemon, tossing gently to combine and emulsify the sauce for 1-2 minutes.
- Stir in the grated Parmesan cheese, adjusting seasoning with salt and pepper to your preference.
- Serve immediately, garnished with the remaining fresh parsley and an extra sprinkle of lemon zest for brightness.
