Ingredients
- 100 grams Small pasta shapes (stars, shells, or ditalini)
- 1 medium (about 200 grams) Sweet potato
- 150 grams Chicken breast
- 1 tablespoon Olive oil
- 0.25 small (about 30 grams) Onion (finely chopped)
- 0.5 clove Garlic (minced)
- 150 ml Chicken broth (low sodium)
- 50 ml Milk (whole or 2%)
- 2 tablespoons Grated Parmesan cheese
- Pinch Salt
- Pinch Black pepper
Instructions
- Peel the sweet potato and cut it into small 1 cm cubes.
- Bring a pot of lightly salted water to a boil, add the sweet potato cubes, and cook for 8-10 minutes until very tender, then drain and set aside.
- While the sweet potato cooks, cook the pasta according to package directions in a separate pot of boiling, lightly salted water until al dente, then drain and set aside.
- Dice the chicken breast into very small, bite-sized pieces, about 0.5 cm, ensuring they are safe for a child aged 6-8.
- Heat the olive oil in a medium saucepan over medium heat, then add the finely chopped onion and cook for 3-4 minutes until softened and translucent.
- Add the minced garlic to the saucepan and cook for 1 minute more until fragrant, being careful not to burn it.
- Add the diced chicken to the saucepan and cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and no longer pink.
- Add the cooked sweet potato cubes, chicken broth, and milk to the saucepan with the chicken and bring to a gentle simmer.
- Use an immersion blender to blend the sauce directly in the saucepan until it's smooth and creamy, or transfer to a regular blender and carefully blend until smooth.
- Return the blended sauce to the saucepan if using a regular blender, then stir in the grated Parmesan cheese, a pinch of salt, and a pinch of pepper.
- Add the cooked pasta and the cooked chicken pieces to the sweet potato sauce, stirring gently to coat everything evenly.
- Serve the Chicken & Sweet Potato Hidden Stars warm, perhaps arranging the pasta in a fun star shape on the plate, to encourage happy eating.
