Ingredients
- 120 grams Cooked white rice
- 60 grams Canned sweet corn (drained)
- 120 ml Milk (any kind)
- 40 grams Shredded mild cheddar cheese
- 10 grams Unsalted butter
- 1 tablespoon All-purpose flour
- 0.5 grams Pinch of salt
- 1 teaspoon Fresh parsley (finely chopped)
Instructions
- In a small saucepan, melt the unsalted butter over medium-low heat, which should take about 1 minute.
- Sprinkle in the all-purpose flour and stir constantly with a whisk for 1 minute until a smooth paste, called a roux, forms.
- Gradually pour in the milk, whisking continuously to prevent lumps until the sauce thickens slightly, about 3-4 minutes.
- Reduce the heat to low and add the shredded mild cheddar cheese to the sauce.
- Stir gently until the cheese is completely melted and the sauce is smooth and creamy, about 2 minutes.
- Add a tiny pinch of salt to the cheese sauce for flavor.
- Gently fold in the cooked white rice and drained sweet corn into the cheese sauce.
- Heat the mixture for 2-3 minutes, stirring occasionally, until everything is warmed through and evenly coated.
- Divide the Cheesy Corn & Rice into two kid-sized bowls.
- Sprinkle each bowl with finely chopped fresh parsley for a touch of color and freshness.
- Serve warm, perhaps arranging the parsley to make a little 'tree' or 'cloud' shape on top of the sunshine-yellow rice.
